Salinas de Janubio is Lanzarote's largest working salt pan, covering approximately 440,000 square meters of carefully engineered geometric pools. The salt pans create an abstract landscape of colors ranging from white through pink to deep red, depending on salt concentration and algae growth.

The facility dates back to the 19th century and continues traditional salt production methods. Seawater is pumped into progressively shallower pools where sun and wind evaporate the water, leaving pure sea salt. The process takes several months and produces high-quality salt used locally and exported.

The geometric patterns of the salt pans, combined with the windmill and workers' cottages, create one of Lanzarote's most photogenic landscapes. The colors change throughout the day and seasons, offering different photography opportunities. The contrast between the white salt mountains, colored pools, and black volcanic landscape is striking.

A small museum explains the salt production process and its historical importance to the island's economy. While you can't walk through the salt pans, viewing areas provide excellent vantage points. The adjacent black sand beach offers additional perspectives.
